A Lifetime of Mi Cocina, From Butter Tortillas to Mambo Taxis
My Mi Cocina story starts around age 2 or 3. My parents have been taking me my whole life, and my first memories are of my mom loading tortillas with butter and sugar from the little containers on every table. In high school, my best friend and I hit the Allen location every Friday for a large bowl of queso before Allen Eagles home games. When I turned 21, Mambo Taxis changed my life, in a cute, fun way of course. That’s when we met Homer, and we’d sit at a bar table just to be served by him. He even came to my college graduation party, catered by Mi Cocina, naturally.
After graduation, my friends and I started meeting at Watters Creek every Monday night, where Carla became our requested server for years. These days I’m pregnant with baby girl number two, and my number one craving has ironically been a Mambo Taxi. I haven’t had one in 263 days, but my mom plans on having a to-go quart waiting at my house when we get home from the hospital.
